Keep it Simple
If you’re anything like me, you have a light dinner at 6:00pm, and a small snack (usually fruit or yogurt) at 8:00pm then you call it a day. Here’s one of my fave dinners. It’s quick and easy, it’s healthy, and you’re going to love it. Marinate your chicken breast (lean meat, fish or shrimp) over night, so that when you’re ready to cook, everything is ready and prepped.
This usually takes me 20 minutes to prepare, fresh.
Place your lean meat on the grill (or in a frying pan with a touch of coconut or virgin olive oil) and flip as required. While this is grilling, take out your serving bowls, or plates, and place a serving of spinach leaves. Top with sliced tomatoes, cucumber, avocado, and your fave dressing, and you’re almost ready.
When the meat is cooked to your liking, cut into thin strips, and sprinkle across the top of your salad.
Dinner is now ready to be served. How’s that? Quick. Easy. Clean.
